Wuthering heights

My routine starts at 5.30 AM when I get up, and quickly get inside the kitchen to cook breakfast for my farmer... The first thing I do is (OF COURSE!) to fill my cup with fresh brewed coffee... And to open the kitchen curtains just to see the sun rise and shine... 



Well, today morning I got the camera and forced myself to go out and don't miss these images Autumn brought... Our very first frozen autumn morning of the year. Can you just imagine how winter's gonna be?



My Heathcliff eat his pancakes as fast as a fly and went to town... I stood  looking through my window for a while and then moved to this: 




Ask what is in that copper pot? It's homemade lemon curd, I had prepared some for Rita's shower and as some of you asked about it I made it again to fill a chocolate cake my sister asked me to prepare... 
By noon the sun had won the battle to the snows and fog and it was shining beautifuly... 




Perfect moment to share a soft chocolate-lemon curd-meringue cake... 




Lemon curd recipe:


(Makes 2 big cups) 



  • 2 eggs, plus 2 egg yolks
  • 3/4 cup (165g) caster sugar
  • 1/3 cup (80g) chilled unsalted butter
  • Zest and juice of 2 lemons

  • Whisk whole eggs, yolks and sugar in a saucepan (my choice is an old copper pot) until smooth, then place pan over a low heat. Add the butter, juice and zest and whisk continuously until thickened. Strain through a sieve into a sterilised jar. Lemon curd keeps, covered, in the fridge for 2 weeks.
